Cole Slaw Salad
1 lb Cole Slaw or Broccoli Slaw bag
3 green onions
½ cup sunflower seeds
½ cup pecans
½ cup terminado (sugar)
1 pack Ramen noodle
½ cup oil
¼ cup apple cider vinegar
Break up noodles and pecans and brown for approx 10 min. Mix vinegar, oil, terminado and noodle season pack together. Mix everything together 1 hour before serving.

Fruit and Nut Roll Up
1 cup pine nuts
1cup sunflower seeds
1 cup whole almonds
2 cups dried cranberries
2 tablespoons of maple syrup
1 teaspoon vanilla
1 teaspoon nutmeg
½ cup coconut flakes
Place nuts and seeds in food processor and ground. Add cranberries and pulse 3-4 times. Add maple syrup, vanilla and nutmeg. Mix until mixture begins to stick. Add syrup if necessary. Place coconut in a flat bowl. Roll the fruit and nut mixture into 1 inch balls and roll them in coconut.

Mango Apple Smoothie (makes 24 oz)
2 eggs
1 banana
1 apple sliced
2 cups frozen mango
Blend all ingredients until smooth and creamy.
Mixed Berry Pear Smoothie (makes 24 oz)
2 eggs
1 banana
1 pear
2 cups frozen mixed berries
Blend all ingredients until smooth and creamy.

Vegetable Ratatoulle
3 Tbs of olive oil
1 large onion
2 cloves garlic
2 red, green or yellow peppers diced
4 zucchini or yellow squash
1 large eggplant
3 diced tomatoes
16 oz chickpeas
1 tsp each dried oregano, basil and thyme
Salt and pepper to taste
Heat oil, onion and garlic till softened. Add peppers until browned. Add zucchini/squash. Add eggplant and saute. Add tomatoes, chickpeas and herbs. Simmer for 25-30 minutes.

Peach Cobbler
1/4 cup peach nectar or water
1/4 cup peach or apricot preserves
1 tbsp cornstarch
1 tsp lemon juice
2 cups frozen peaches

For the topping:
1/3 cup whole-wheat flour
1/3 cup organic all-purpose flour
1/4 cup rolled oats
2 tbsp turminado
1 tsp baking powder
1/4 tsp cinnamon
1 egg
1/4 cup almond milk

Lightly grease an 8 x 8 x 2 dish. In a saucepan combine peach nectar, preserves, cornstarch and lemon juice and stir till blended. Stir in peaches and cook till soft and thick. Preheat oven to 400F. To make topping, in a medium mixing bowl, combine flours, baking powder, and cinnamon. Mix the egg and almond milk and add to flour mixture. Mix to form a soft, spoonable dough. Transfer peach mixture into the baking dish. Using a spoon, drop small portions of dough over the peaches to mak a "cobbled" effect. Bake for 20-30 minutes or until crisp.

Red Beans
1 bag of red beans
1 medium onion diced
1 green or red bell pepper diced
2 stalks celery diced
1 package of smoked Turkey Sausage diced
Tony Sacheres, Salt, Pepper and Garlic to taste.

Soak beans the night before. Place soaked beans, onion, bell pepper, celery, and sausage in crockpot. Fill with water to an inch above ingredients. Add spices. Cook on low heat for approx. 9 hours....all day long. :) Add spices if necessary.

Apple Raspberry Crisp
¼ cup unsweetened apple juice
¼ cup raspberry jelly
1 tbsp cornstarch
20 oz peeled , chopped apples
1 cup frozen raspberries
For topping:
¼ cup rolled oats
3 tbsp whole grain bread crumbs
2 tbsp turbinado
1tbsp butter, melted

Lightly grease 8x8x2 dish. In a saucepan combine juice, jelly and cornstarch.
Stir in apples and raspberries; cook till slightly soft. Spoon into dish
Preheat oven to 400F. In a bowl combine the topping ingredients and mix well. Sprinkle over fruit and bake 25-30 minutes or until crisp.
